1/2 cup (125 mL) 100% Ontario Honey
1/3 cup (75 mL) broken cashews
1/2 tsp. (2 mL) salt
1/4 tsp. (1 mL) ground ginger
2 lbs. (.9 kg) sweet potatoes (5 or 6 medium), cooked, peeled and cut into thick pieces
1 cup (250 mL) canned peach slices, drained
3 tbsp. (45 mL) butter
Combine honey, cashews, salt and ginger. In a 10” x 6” x 2” (254 mm x 152.4 mm x 50.8mm) baking dish, layer half the sweet potatoes, half the peach slices and half the honey mixture. Repeat layers. Dot with butter.
Bake, covered at 350 degrees F. (177 C.) for 30 minutes. Uncover and bake 10 minutes longer. Spoon syrup over before serving.
