The secret to moist tender ribs with lots of flavour is to boil the ribs before barbequing them. You can boil the ribs and refrigerate them until you are ready to put them on the grill.
Bring a large pot of water to a boil. Add salt, 1 bay leaf, 1 medium carrot, 1/2 onion, 1 stalk celery; all roughly chopped.
Add pork back ribs and boil for 45 minutes or until tender but not falling off the bone. Marinate with 1/4 cup vegetable oil, 1 tablespoon garlic, 1 tablespoon fresh basil (or 1/2 tb dried) and ¼ tablespoon chili garlic paste (Sambal Olek). Grill ribs on medium heat and brush with the BBQ sauce.
